WHAT IS MARTIN & SERVERA?
Martin & Servera is a Swedish family
- wned restaurant wholesaler. We
work with purchasing, warehous- ing, selling and distribution of food, drink and equipment to schools, hotels, restaurants, cafés and other applicable businesses.
WHO SIGNS AGREEMENTS WITH MARTIN & SERVERA?
The owner of the restaurant, the restaurant chain’s central pur- chasing department or the municipality for schools, senior care homes or preschools are responsible for signing agreements with Martin & Servera. The requirements that a municipality may impose on the purchase of food are governed by the rules in the Swedish Public Procurement Act (LOU). A private restaurant or restaurant chain is freer to formulate their own requirements but must of course also adhere to legislation and govern- ment regulations. An agreement in the public market usually applies for two to four years. The agreement determines which products the chefs in the municipality’s kitchen may use and what they may cost. An agreement with a private restaurant is usually signed for a duration of one to two years, while agree- ments for large chains may be longer.
WHAT DOES A RESTAURANT WHOLESALER DO?

Animal welfare
When we purchase meat, we demand that our suppliers do not use antibiotics for growth- promoting purposes, but that antibiotics are only used after prescription by a veterinarian, and that a health plan with routines for preventive health care and reduced spread of infection exists.
It should be easy to shop sustainably. Therefore, sustainable business practice is a central part of the way Martin & Servera operates. Here are some examples of the things Martin & Servera continuously does to contribute to a sustainable society.

Sustainable food chain
Martin & Servera has been a member company of the industry initia- tive Hållbar Livsmedelskedja (Sustainable Food Chain) since the turn
- f the year. The purpose is to achieve increased collaboration in the
food chain regarding sustainability. This is an initiative that focuses on increasing the pace of change to sustainable food production and
- consumption. Among the members are fifteen major food actors in the
Swedish market. “We believe in the idea that no single company can find the solu- tions alone for the future. Collaboration throughout the food chain is the key”, says AnnaLena Norrman, Chief Sustainability and Quality Officer for Martin & Servera.
In 2018, a decision was made to phase
- ut whole fresh eggs from caged hens. By
2021, they will be completely be replaced by eggs from free-range hens. This decision has been taken to meet future customer demands regarding animal welfare and is part of Martin & Servera’s strategy to facili- tate customers sustainable choices. Reduced plastic use We have set clear goals to reduce the use of plastic. Reduced food waste We work systematically to reduce waste in our own business, and together with customers and sup- pliers. Sustainable distribution We use modern vehicle technology to reduce emissions, and our ware- houses are energy efficient. Plant based food We inspire and educate cooks regarding vegetarian and vegan cooking. Sustainable products We want to make it easy for custom- ers to make sustainable choices and

housing, property and transport. Altogether, there were 300 points to check and only four deviations were found.
Reduced fuel consumption and emis- sions with environmental impact are a priority issue for Martin & Servera

there are both electric hybrids and bio-gas vehicles in the company fleet. “As a major player on the market, it is important that we take respon- sibility for sustainable development. In this way, we support the transition to more sustainable deliveries”, says Stefan Bergström Hedmark, CEO Martin & Servera Logistik.
Highest rating for food safety Reusable crates
Livsmedelsgrossisterna (The Industry Association for Food Whole- salers), of which Martin & Servera is included, and Svenska Retursystem (reusable unit system) have concluded an agreement to implement the food industry’s system for reusable crates in the restaurant and catering industries. The purpose is to increase sustainability and reduce resource usage in the industry. The basic idea of the return system is that portions of distribution must be in crates that can be reused again and again. The return system creates efficiency and reduces carbon dioxide emissions, improves the working environment and saves time.
Martin & Servera works to improve the conditions for factory workers in Asia, partly through requirements in the compa- ny’s code of conduct, which is part of the business agreement with a supplier, and partly through training initiatives where the cooperation with QuizRR is an important
- part. QuizRR conducts business training
for companies, management and workers to raise knowledge regarding rights, condi- tions and working environment for factory workers in Asia.
Better working conditions
On the path to sustainable deliveries
Martin & Servera’s warehouse in Enköping has been certified with the highest grade in an audit according to the food safety standard BRC Storage & Distri-
- bution. The warehouses in Umeå
and Halmstad were already certified, and next in line is the Norrköping facility. The BRC standard focuses on food safety issues and complements the ISO certification that all Martin & Servera’s operations possess. In Enköping, the auditors went through the areas of ware-

As part of the ambition to be a responsible company, Martin & Servera has decided to stop selling all tobacco products. Responsibility has always been an important part

Therefore, the management has decided that all companies in the Martin & Servera Group will now remove tobacco products from the product range. Martin & Servera sold tobacco products for approximately SEK 13 million in 2018. “We want to use our impact to influence society in a positive way”, says Irene Waldemarson, Manag- ing Director of Martin & Servera
- Restauranghandel. This is a decision
that is good for both people and the environment.
Reduced food waste
Martin & Servera cooperates with the KRAV certified restaurant Gotthards Krog.
Reducing waste throughout the food chain is important from both an economic and an environmen- tal perspective. When waste is reduced, the negative environmen- tal impact decreases because goods that never will be consumed, are not produced to begin with. Martin & Servera supports Stockholms Stadsmissions Matcen- tralen, Västerås Stadsmission and Götborgs Räddningsmission to take advantage of food and bever- ages that for some reason cannot be sold, but still are fully usable. “During 2018, the cooperation rescued 44 tons of goods in total. We are pleased that these prod- ucts will be used”, says Birgitta Niemi, Environmental and Quality Assurance Manager at Martin & Servera. This is one of many measures we take to reduce food waste throughout the food chain. Martin & Servera constantly works to inventory the company’s

Proposal for more ambitious climate goals
“When food products, already produced, are not sold, resources such as water, raw materials and energy have been used completely unnecessarily, a waste both for our company and for society at large.”
AnnaLena Norrman, Chief Sustainability and Quality Officer, Martin & Servera Martin & Servera has signed a pro- posal to influence the EU to set more ambitious climate targets. More than 60 companies from Nordic corpo- rate networks have currently signed up for the proposal. Included in the 60 Nordic companies behind the proposal are Finnish companies, and several other companies in the food industry such as Coca-Cola, Fazer and Lantmännen. “Signing the proposal is a way of trying to influence the outside world

Plant based proteins
For those wanting to serve climate smart food, there are many options
- today. Martin & Servera has several
innovations in the range for customers who want to create good plant-based food, such as leguminous spices and vegan mince made of yellow peas and ready-made Veggie burgers. The Swedish plant-based mince has been developed at Torsåker Farm north
- f Stockholm. Torsåker is a test facility
and a development centre for future sustainable foods. The farm is run by Axfoundation, a non-profit organization that works extensively for a more environmentally and socially sustainable society. One
- f Torsåker’s focus areas is Swedish-
grown protein crops.
Plastic policy: Reduce, reuse and recycle
Martin & Servera aims to reduce the use of plastic disposable products and plastic used in packaging food products. Now we have a plastic policy that checks the product range against alterna- tive materials and new packaging solutions. According to our plastic policy, the products that are regulated according to a new EU directive must be phased out by 2021 at the
- latest. This applies to disposable
plastic products, such as cutlery, plates, straws, drink stir sticks, balloon sticks, products made of
- xo-degradable plastic, and food
and beverage containers made of expanded polystyrene. By the year 2022, all plastic packaging must be made of recyclable materials. This includes both Martin & Servera’s
- wn branded products and prod-
ucts from external suppliers and producers. By the year 2030, the fossil raw material in plastic packaging will be replaced by fossil-free or recy- cled fossil raw material. The work

ucts in new functional materials and reviewing packaging solutions to minimize plastic usage will be intensified. Utmaningen (The challenge) is Martin & Servera’s annual sustainability competi- tion for customers in the restaurant and catering industry. The competition helps to spotlight important sustainability issues in order to inspire the industry to further
- develop. Previous competitions have involved issues such as
diversity, vegetarian food and sustainability ideas. The challenge for 2019 was about activities that increase the purchases of organic and environmentally labelled products. Winner in the competition’s category Care, school and welfare is Pumpan’s preschool in Geneta, Södertälje. The winner of the Hotel restaurant and café category was Radisson Blu Waterfront Hotel for its work with Responsible Business. Winner of each competition category wins SEK 25,000 to use for continued sustainability work.
