With his passion for Wine and Art he has developed projects such as personalized wine labels with original artworks by selected artists. With an extensive, and impressive under- standing of route to markets, he develops brands in the Asian Pacifjc region. aronne GREGORInI An Italian Architect from IUAV in Venice, and Gfour partner since its foundation. For 5 years he has collaborated with the mario Galvagni Architecture fjrm in milan, he is also a member of the C.R.A.P.F. Committee. He became the organizer of important institutional events between Italy and Thailand, one of which was for the 140 years

AUTheNTiC wiNes thanks TO BIODynAmIC VITICUlTURE Biodynamic quality plays an important role in the expanding organic wine market. The Biodynamic method supports the princi- ple of ‘terroir’ through the use of the prepara- tions and this is clearly refmected in the fmavour

  • f the wines.

Biodynamic viticulture produces healthier vineyards that in turn lead to more spirited

  • wines. The wines are developed with respect

and in harmony with nature as well as with the necessary time in the cellar – leading to a positive interaction with human sensory per- ceptions. The vine’s roots extend up to ten metres into the ground to absorb fjne minerals which promise a distinctive aroma and fmavour. The Biodynamic horn manure and other prep-ara- tions further strengthen this connection with soil which can be tasted in site-specifjc wines. Horn silica improves the vine’s capacity to absorb sunlight and cosmic forces, promotes photosynthesis and harmonizes ripeness. Vintners harvest less than their conventional colleagues, they give their vines time to devel-

  • p their terroir completely, to ripen and reach

their individualized fmavour and aroma. In this manner certifjed Biodynamic cultivation pro- duces natural, absolutely authentic wines for discerning connoisseurs.

ORGanIc Organic wines are made from organical- ly grown grapes, without any added sulfjtes (though naturally occurring sulfjtes will still be present ). BIODynAmIC Biodynamic is similar to organic farming in that both take place without chemicals, but biodynamic farming incorporates ideas about a vineyard as an ecosystem, and also account- ing for things such as astrological infmuences and lunar cycles. A biodynamic wine means that the grapes are farmed biodynamical- ly, and that the winemaker did not make the wine with any common manipulations such as yeast additions or acidity adjustments. A wine “made from biodynamic grapes” means that a vintner used biodynamically grown grapes, but followed a less strict list of rules in wine- making. DeMeTeR IntERnatIOnaL Demeter International is the largest certifjca- tion organization for biodynamic agriculture, and is one of three predominant organic cer-

  • tifjers. Its name is a reference to Demeter, the

Greek goddess of grain and fertility. Demeter Biodynamic Certifjcation is used in over 50 countries to verify that biodynamic products meet international standards in production and processing. The Demeter certifjcation program was estab- lished in 1928, and as such was the fjrst eco- logical label for organically produced foods. Certifjcation is diffjcult to come by and must be renewed annually. Demeter’s “biodynam- ic” certifjcation requires biodiversity and eco- system preservation, soil husbandry, livestock integration, prohibition of genetically engi- neered organisms and viewing the farm as a living “holistic organism”. The certifjcation verifjes the fulfjllment of the standards on be- half of the farmers, which in turn guarantees high quality food products to the consumers.
