  2. Our Winery This is where tradition, craftsmanship, appropriate technology and vineyard management throughout the year are amalgamated to achieve our Identity. Our winery is located in Chacras de Coria, Lujan de Cuyo, Mendoza. This winery is from the nineteenth century and was completely recycled thinking only of quality, in order to express all the qualities that our terroir offer at the foot of the Andes. For this technology was incorporated and changes were made in its structure. The idea of the family winery comes from wanting to communicate our style in delicate, exclusive and transcendent wines.   6. RESERVE La Padovana Malbec UGARTECHE VINEYARDS, LUJAN DE CUYO, Mendoza, Argentina. Property of our property at 1000 meters above sea level. PREPARATION Clusters are selected manually. Fermentation is delayed to extract the maximum aromas and then a 15% bleeding is performed in order to increase the concentration, allowing greater contact between solids and liquids. Spontaneous alcoholic fermentation in concrete pools.   9. GRAND-RESERVE Bueyes This line is made with grapes from La Consulta in San Carlos in the Uco Valley. Its name refers to the oxen with which our grandparents worked the vineyards. Becoming an indispensable tool Bueyes Cabernet Sauvignon VINEYARDS The Cabernet Sauvignon is made with grapes from the Uco Valley. The vineyards are located in La Consulta, 100 km from the city of Mendoza. Thanks to the quality of soil and the thermal amplitude that exists in the area, they give the best conditions for the elaboration of these excellent wines. PREPARATION The harvest is carried out manually, in the fourth week of March. The fermentation is carried out in cement tanks, to then move to barrels for 10 months, alternating French oak barrels and American oak barrels. Then it is left in storage in the bottle for 12 months NOTES OF CATA BUEYES CABERNET SOUVIGNON is deep red and uniform bordeaux. It has a wide aromatic spectrum, with defined notes of spices (sweet paprika), ripe fruits and some faint vegetable edges. The palate has a personality based on the strength of the fruit.   10. Bueyes Malbec VINEYARDS BUEYES MALBEC is made with grapes from our own vineyards located in the Valle de Uco area. The vineyards are in La Consulta, 100 km from the city of Mendoza, 4 years old, whose planting density is 5882 plants per hectare, which are thinned to reach a production of 6,700 kg per hectare, which equals to one bottle per plant. Thanks to the virtues of the soil, the amplitude ends and the water of the mountain range, give the best conditions for the elaboration of these excellent wines. ELABORATION The harvest is carried out manually, in 18 kg bins. These grapes go through a manual selection tape, where leaves and branches are removed, and then go through the destemmer. The juice of the grape is deposited in cement tanks where it is left to ferment for 1 month. During this month racking is carried out periodically. Then the wine resulting from the maceration is placed in French oak barrels and also in American oak, for 10 months, to be bottled later. TASTING NOTES BUEYES MALBEC has great aromatic potential and perfect varietal typicity. Intense purple red color, with violet tones. The balance achieved between wine and wood allows us to appreciate fruit aromas such as cherry, plum, blackberry and at the same time elegant nuances of vanilla, chocolate and toast.
