WHO SIGNS AGREEMENTS WITH MARTIN & SERVERA? Restaurant owners, restaurant chains’ central purchasing office or the municipality where a school, home for the elderly or preschool is located sign agreements with Martin & Servera. The requirements that a municipality may impose on food purchasing are governed by the rules of the Swedish Public Procurement Act (LOU). A private restaurant or restaurant chain has more freedom to specify its own requirements, but of course it must also comply with the law and official regulations. An agreement in the public sector is usually in effect for two to four years. The agree- ment determines which products the chefs in municipal kitchens may use and the prices of those products. An agree- ment with a private restaurant ordinarily runs for one to two years, which agree- ments with large chains may be in effect for longer periods.

WHICH PRODUCTS CAN CHEFS PURCHASE? The private restaurants purchase the products that are consistent with the restaurant's business idea or concept, while municipal agreements determine which products cooks at schools, pre- schools and elder care facilities can

HOW DOES MARTIN & SERVERA KNOW THAT THE PRODUCTS COME FROM GOOD SUPPLIERS? The suppliers we choose to buy products from should be good at growing, raising and producing the products needed to prepare good
- food. We want our suppliers to be
good stewards of people, animals and the environment. It’s also impor- tant for them to be honest. Therefore, all of our suppliers sign our code of conduct, which contains rules on how they must work in order to sell to Martin & Servera. Sometimes we perform in-depth inspections of farms and factories. Sometimes we receive reports from visits to a specific fac- tory or farm by other companies. In addition, we constantly keep in touch with our suppliers through meetings, telephone calls and e-mail.

Reduced waste, effjcient logistics coordination, sustainable transports and high energy performance in our warehouses are measures that help reduce the environmental load and energy consumption of Martin & Servera’s operations.
WE ARE WORKING to reduce
negative environmental impacts through measures including using less energy. We make use of surplus energy, we’ve invested in two of our own wind turbines and a solar panel facility, we have replaced old fluorescent lamps with presence-controlled LED lighting and we’re working hard to
- ptimise the distribution of
products to our customers. The new warehouse in Enköping is located optimally for short, effj- cient and climate-smart transports.
Emissions: Transports
Reducing fuel consumption and air emissions that impact the environment from our own transports is a priority issue. In 2017 80 percent of the energy used for our own transports was
- renewable. Martin & Servera has
invested in several electric hybrid trucks to test new technology in practice and help reduce emissions.
Reduced waste
Our efforts to reduce our own food waste are based on good agreements with suppliers, a wise approach to building our range,
- ptimal supply of goods, effective
inspection of goods at receipt, careful handling of goods in the warehouse and transportation, date inventories and active sales. Martin & Servera has also participated in several projects as part of the government's food strategy, including a reduction in waste throughout the food chain. In 2017 Martin & Servera began a partnership with the Stockholm Stadsmission Matcentralen (Food Centre). Martin & Servera donates products with upcoming best- before dates or goods that cannot be sold for other reasons but are still edible. So far this partnership has so saved nearly four tonnes of goods from going to waste.

2017 ACTIVITIES
A new, energy-efficient warehouse in Enköping was put into operation in the first quarter of 2017. The warehouse structure was changed from five warehouses to four. A new warehouse management system was put into operation at the Umeå warehouse. Electric and electric hybrid trucks were tested. Partnership with the Stockholm Stads- mission Matcentralen (Food Centre).
2017 RESULTS
The share of renewable energy in the Group was 78 % (vs. 71% in 2016). The Group’s air emissions have decreased by 34%. The tonnes of waste from the Group’s companies sent to recycling rose by 29 %. Energy use at Restaurangbutiken in Årsta declined by 17 % after a renovation. 26 audits of chartered carriers were performed.

Development of Group-wide logistics cooperation arrangements. Implementation of a warehouse manage- ment system in Norrköping. A continued increase in the share of renewable energy in distribution. MARTIN

SERVERA works to
increase sales of sustainable products in order to reduce the negative environmental impact caused by food production. In 2017 the “Sustainable choice” label was introduced for organic, eco-labelled and ethically labelled items on Martin & Servera’s e-commerce site. This makes it easier for customers to find the right product from a selection of thousands of items. Martin & Servera’s combined e-commerce site and website was launched in January 2018. It is intended to
- ffer our customers an attractive,
simple and clear user experience.
Organic goals remain high
Eighteen new organic and envi- ronmentally-labelled products were launched under Martin & Servera’s own brand in 2017. The long-term goals for 2020 for the
- rganic and eco-labelled share of
customers’ total purchases from Martin & Servera AB are 15 percent for private restaurants and 40 percent for the public sector. In 2017 private restaurants reached a share of 11 percent. The share for public sector customers reached 30.4 percent.

Today Martin & Servera’s range features products from numerous regional and small-scale food
- producers. This enables to help
- ur customers find local products
that can strengthen the menu of their restaurants.

Every year Martin & Servera holds a sustainability competition known as the Challenge. In 2018 the challenge was to reduce food

Quality and food safety are essential to what Martin & Servera
- ffers. Environmental and quality certifjcations are an impor-
tant part of our sustainability efforts in order to secure the entire chain from raw ingredient to when the food is served.
Martin & Servera’s trucks have refrigeration and measurement systems to control the cooling chain and ensure that it is never interrupted.
QUALITY AND FOOD safety issues
are a top priority throughout Martin & Servera’s supply chain – from production by suppliers via
- ur warehouses all the way to
delivery to the customer. Our customers should know that they are doing business with a com- pany that constantly strives for the highest quality and safe
- deliveries. Our warehouses have
temperature-controlled zones for the best shelf-life of various products, and the trucks have refrigeration and measurement systems to verify that the cooling chain is uninterrupted. Labora- tory tests, spot checks and inspections of product labels are also part of our food safety efforts.
Environmental and quality certifications
Martin & Servera’s environmental and quality certificates show that we have effective procedures for the inspection of goods, products and deliveries – and that food safety is constantly in focus. The certification body (DNV GL) regularly audits Martin & Servera to verify that its work complies with the standards for manage- ment systems.
Product recalls
Martin & Servera AB has efficient and smoothly functioning proce- dures for what should happen and who should be informed if we receive an alert about a compro- mise to food safety by a customer
- r supplier. Over fifty cases and
product recalls were managed during the year.
Food alerts
One food alert that received attention in the media in 2017 concerned eggs containing high concentrations of a pesticide used for mites in livestock buildings. Martin & Servera performed its
- wn tests to ensure that the eggs
and egg products in our own- brand products, in products that we import, and in products from major brand suppliers were not connected to this food alert.

Increase in the number of specialists in sustainability and quality assurance. Renewal audit for Martin & Servera AB’s ISO certification completed. Third-party audits for the MSC, ASC, KRAV and BRC Storage and Distribution certifica- tions were performed at Martin & Servera AB‘s operations, with positive results. It is extremely important to us that the products we sell must be sustainably produced, with a focus on animal welfare, good working conditions and low environmental impact. Our code of conduct is the foundation.

SERVERA’S code of
conduct includes requirements on health and safety, working condi- tions, anticorruption policies, human rights, environmental performance, animal welfare and efforts against antibiotic resist-
- ance. The code of conduct is part
all of our supplier relationships, and it applies to both Swedish and foreign suppliers. In 2017 Martin & Servera audited producers in Sweden and several other countries.
Certified palm oil
In 2017 Martin & Servera achieved it goal to have 100 percent certified segregated palm
- il in its own-brand products. This
means that the oil used is guaran- teed certified. This goal was established to contribute to the development of sustainably produced palm oil.
Sustainably produced soy
Martin & Servera is endeavouring to have 100 percent of the soy used in the production of the food we sell be responsibly produced, from both social and environmen- tal perspectives. Therefore Martin & Servera has a soy policy, We are members of the Roundtable on Responsible Soy Production (RTRS) and the Soy Dialogue, and we purchase soy certifjcates to compensate for the volume of soy used in the production of our
- wn-brand products.
Responsible antibiotic use
The wise use of antibiotics in animal husbandry reduces the risk of antibiotic resistance. Martin & Servera has a policy for responsible use of antibiotics and it places the same requirements
- n its suppliers via the code of
conduct.Therefore antibiotics are always high on the agenda during business discussions with meat producers.
Sustainable production
2017 ACTIVITIES
In 2017 we began a partnership with Worldfavor, a web-based platform for sustainability information about suppliers. Participation in an antibiotics forum with representatives from both human medicine and animal welfare to discuss measures to reduce antibiotic resistance.
2017 RESULTS
16 supplier audits focusing on sustain- ability and food safety (19 in 2016). 102 suppliers were assessed for supplying goods to Martin & Servera AB. 305 Chinese factory workers were trained on rights and responsibilities on QuizRR’s e-learning system. Martin & Servera AB purchased soy certificates corresponding to 4,600 tonnes of soy (4,500 tonnes in 2016). Our objective to have 100 % certified segregated palm oil in Martin & Servera’s
- wn-brand products was met in 2017.

2017 RESULTS
The percentage of employees with fewer than five sick days was 50.7 in the Group (47 % in 2016). Absence due to sickness was 6.5 % (5.6% in 2016), 6.6 % for women and 6 % for men. The percentage of women in managerial positions in the Group was 29 % (27 % in 2016). In senior management the corre- sponding figure was 38.5 % (33 % in 2016). 4,707 hours of internal training were conducted in the Martin & Servera Group. 232 workplace accidents were reported, of which 65 involved women and 167 involved men (174 in 2016).
