Restricted Quantities 2021 Program & Wines
The year 2021 marks Restricted Quantities 21st program, featuring an entirely European line-up of varietals. The number 21 and the Europe-focus led us to the concept of tarot.

- The number 21 (since 2021 is the 21st anniversary of the
Restricted Quantities program and the “major arcana” tarot card pack has 21 trump cards)

Why? Spain Tempranillo Merlot
- A red blend that has proved popular in northern Spain, particularly Navarra,
and in various parts of the New World.
- Tempranillo's thick skins can sometimes lead to wines with tough tannins.
Blending it with Merlot is ideal as the latter can smooth out these rough edges, making a more approachable wine.
- Tempranillo merlot wines are generally rich and concentrated with berry fruit
flavours.

- Has been adopted across the winegrowing world, but is still very much
associated with the fine wines of Spain and Portugal.
- Strawberries, tobacco and spice flavours can be found in many
Tempranillo wines.

- Merlot has spread far and wide from its homeland in Bordeaux, and is
found in many top wine regions around the world.
- Merlot commonly exhibits cherry or caramel flavours but is perhaps

- Spain is the fastest growing old world country - growth rate 2.3%
- The Muscat grape is thought to be the world’s oldest known grape
variety .
- The grape is characterized by an intensely aromatic bouquet and a
musky, fruity (mandarin orange, apricot, peach), honeyed flavour.
- At present, Muscat wines are not mainstream wines but their presence
is felt in every country in which wine is produced.

- If you love full-bodied dry reds like Cabernet Sauvignon or

- This lesser-known Sicilian grape variety deserves more
recognition as a wine to be taken seriously.
- Nero d’Avola is known for its superbly bold fruit-driven
flavours that range from black cherry to prune.
- Nero d’Avola is one of the full-bodied wines of the world in the
same boldness as Cabernet Sauvignon, Pinotage, and Syrah.
- With Nero d’Avola you can expect moderately high acidity,
but not so tart that the wine tastes overly spicy .

- Pink wine happily spans the colourspace between red and
white wine, in a way, rosé is more like a state of mind.
- Rosé happens when the skins of red grapes touch wine for
- nly a short time. Where some red wines ferment for weeks
at a time on red grape skins, rosé wines are stained red for just a few hours.
- The epicenter of the Rosé wine world is in the South of
- France. There, along the Mediterranean, regional varieties
like Grenache, Carignan and Syrah are blended together to make refreshingly dry Rosé.
- The primary flavours of rosé wine are red fruit, flowers,
citrus, and melon, with a pleasant crunchy green flavour on the finish similar to celery or rhubarb.

Bourgovin RC212 This yeast was specifically developed in Burgundy, France for red wine fermentations to enhance varietal character by emphasizing ripe berry and fruit aromas. QA23 This yeast Originating from the Vinhos Verde region of Portugal, the QA23 was selected for enhancing the flavors and aromas of grapes utilized in the production of premium white wines. Recommended for styles such as, Chardonnay, Sauvignon blanc, Chenin Blanc, Colombard and Semillon, the QA23 produces fresh, fruity and clean wines.
