THE CHASE BEGINS 1/2019

Each fugitive hails from their wine’s country of origin - offering the personification of each grape’s unique character with that of their fugitive. Winemakers can also enjoy learning about the notorious characters born of these regions, and their bold stories.

Intense, masterful, defiant or smooth—whatever the preference, there’s a tale in every wine. A wine for every tale, and a fugitive for every cellar… four notoriously great ones. THE FUGITIVE As an immigrant miner during the California gold rush, Chilean-born Joaquin Murrieta and his family were victims

• f ethnic discrimination, suffering much at the hands of

American miners. Forced off his claim under the Foreign Miner’s Tax of the 1850’s, he was pushed into a life of crime and into wearing the mask. Murrieta fought to defend lives and livelihoods of his people – stealing cattle and horses, robbery and even murder. THE WINE Revel in layer upon layer of surprise in this Chile Cabernet Merlot Syrah. Enticing hints of smoke and luscious qualities are intricately woven into this wine’s darkly exotic character. Salut to life, to wine, and to the man behind the mask!

This full-bodied dry wine presents aromas of juicy blackberries, cassis, mocha and spices. On the palate, it showcases polished tannins and a smooth finish. Chile Cabernet Merlot Syrah

THE FUGITIVE The son of an Irish transported convict, Ned Kelly and his family were downtrodden, and persecuted by police. Imprisoned at a young age, Ned became entangled with the “Greta mob”, and a violent confrontation at the Kelly home saw Ned indicted for attempted murder. Promising to avenge his mother’s imprisonment for her role in the incident, Kelly and his gang were labeled outlaws. But with the help of sympathizers, Kelly eluded capture, demanding justice for his family and the poor in his rural community. In a last stand, Kelly and his gang wore suits of armour made from ploughs; none would survive but Kelly. Ned was captured and sentenced to death at Old Melbourne. THE WINE This wine’s balanced, easy-going relationship of subtlety and freshness harmonize with the complexities of its unwitting armour-wielding fugitive. Cheers to an unsung hero!

THE FUGITIVE Considered a leader of a mafia-type group called the Camorra; Alfano was rumored to have been responsible for the murders of a New York City police sergeant and a rival Camorra boss, Gennaro Cuocolo, and his wife. Many considered Alfano in the light of a demigod, as he was thought to be invulnerable to bullets and able at all times to escape his pursuers. Unfortunately, he was caught and a trial against Alfano expanded to a tribunal against the Camorra, where he was found guilty. He maintained his innocence, and after the illegitimacy of the trial was discovered, he was released after serving 27 years of a 30 year sentence. After his release in 1934, he was never seen or heard from again. THE WINE A unified transparency and delicate appeal that collaborates well with its robust and hearty counterparts. These are the true markers of both a leader and a great wine! Saluti to a man of lasting endurance and mystique!

THE FUGITIVE It was in Salamanca where José would start his life as a

• bullfighter. Yet only two years later, he abandoned it for
• smuggling. Obtaining goods in Gibraltar, he and a partner

were in charge of distribution. Called again to the bullring for the celebration of King Ferdinand VII in 1814, José’s life and love took a drastic turn. Ulloa was on horseback to fight, when an accident forced him to return home unexpectedly. His unfortunate return led him to discover the infidelities of his

• wife. After killing the lover and the unfaithful wife, he found no
• ther solution to his destroyed life than enlisting in the squad
• f bandits known as, Los Siete Niños de Ecija. All except

José, were captured and executed in 1817. THE WINE Like Navarro’s harrowing wildly juicy tales, this wine will entrance and entice the palate with a voluptuous headiness and earthy appeal that will have your glasses raised! Saludos to a man who lived with such passion!

This dry wine unveils aromas of black and red berries, black pepper, and spices from oak. On the palate, it presents woody flavors and polished tannins for a bold finish. Restricted Quantities 2019 Kit Components

Crafting flavorful wine requires the highest quality must. In addition, using the right yeast is essential to enhance the wine’s complexity. During fermentation, yeast produce small amounts of volatile compounds that contribute characteristics to a wine’s aromas and flavors. Some of the most important flavor compounds are called esters, aldehydes and ketones. Advances in the understanding how yeast control the formation of these aroma compounds has lead to the development of yeast strains which can alter or emphasize various aromatic notes in the wine.

Varietal Enhancing Yeasts

Bourgovin RC 212 (Red kits) This yeast was specifically developed in Burgundy, France for red wine fermentations to enhance varietal character by emphasizing ripe berry and fruit aromas. It also promotes good color stability and extraction. ICV-D47 (White kit) This yeast is a Côtes-du-Rhône isolate for the production of complex whites with citrus and floral notes, and for full-bodied, barrel fermented Chardonnay and other white varietals. When left on lees, ripe, spicy aromas with tropical and citrus notes are developed. It is a high polysaccharide producer known to accentuate fruit characteristics and bring volume and complexity to white wines.

Yeasts in RQ2019 Kits

After top quality must, yeast is the most important ingredient in your kit to produce an interesting and complex wine. That is why for our RQ2017, we have chosen yeasts that will enhance the varietal character of the grapes to ensure your wine properly replicates the wines made in the famous winemaking regions of France. During fermentation of grape juice, yeast produce small amounts

but silkier tannins which is ideal for lighter wines. French oak contributes flavours such as cigar box, cinnamon, and coffee.

American oak is used by many winemakers for the aromatic sweetness it contributes to the wine. On the palate, American oak provides a tannin structure that accentuates the fruit on the mid palate. While on the nose, it will contribute aromas of vanilla, coconut, dill and mocha.

The GenuWine Winery Grape Skins included in our three red wine kits are made through a patented process of gently drying crushed whole grape skins to retain original color and nutritional integrity. The skins are processed to maximize color and flavor extraction so that all their goodness can be extracted in a five or six day fermentation period. Grape skins will add smooth tannins, robust color, and rich aromas to your red wines, making them more complex and fuller-bodied. These bigger, bolder red wines will drink well while young, but the goodness from the skins will also continue to enhance the flavor of the wine when aged.
