Here at Simpson’s we have tried to collect a diverse selection of wines to suit the diverse nature of our food. With examples from both the new and old world we have tried to ensure that each is of the best quality for the style and price. We have laid out the wine list by grape variety starting with the grapes that produce the lighter and more aromatic wines through to the richer and more savoury styles. This should allow people to explore wines that may be outside their comfort zone but not a million miles away in style. If you are looking to explore our tasting menu we offer the Classic Wine Flight: a selection of wines chosen as an introduction to food and wine pairing bringing together a range of styles, regions and grapes. Older Vintages:

Dom Perignon often hold back some of their wines to be released at a later point. As a champagne matures it reaches 3 different peaks of excellence through its life, these are known as Plenitudes. The first peak is the first release of Dom Perignon. They then release the champagne again at its second and then third Plenitude. These are some of the most intense and expressive forms of champagne to be found.

England’s Sparkling wine history is longer than people think with Christopher Merrett, an English Scientist, who made influential changes to the Champagne Method of production in the 17th Century. However, production of quality wines is a much more recent step. Produced in the same method and from the same grapes as Champagne it can produce some excellent sparkling wines to rival its French cousins and due to climate changes our still wines are getting better all the time.

Rose W Win ines

Rose wines are made from red grapes that have had a very short soak on the skins to add a touch of colour and a layer of red fruit whilst retaining their lighter body. They show different colours, such as delicate salmon and peach through to deep pink and light red. Colours usually have more body and a touch of structure; this is a result of a slightly longer maceration on the skin.

Orange W Win ines:

These are wines made from white grapes in the same manner as red wine. To produce a white wine, the skins are removed after the juice is pressed and they are discarded. However, in the case of Orange wine the skins are left with the juice to macerate during fermentation. This process adds a more unusual character to the wines and a tannic structure more akin to red wines.
