  1. History In the past 1869, Count Buffarini decided to start the activity of Censi Buffarini farm. Ever since that time the farm has been car- rying on the production of boh red and white wines from grapes, white (Verdicchio dei Castelli di Jesi), and red (Rosso Piceno and Rosso Conero); the latter come from Montepulciano and Sangiovese grapes although at different rates. These wines, carefully selected and although products of Controlled Origin, were not bottled and sold directly by the company, mainly engaged in laying cereal, but were assigned to the various wineries in the area. These wines have allowed the company to achieve many awards in various regional and national competitions. Since the 1990’s , the company decided to bottle and mar- ket the product, the result of over a century’s experience. The vineyards were replanted with new ones and, taking into account the evolving consumer demands, a great tra- dition native vine, the Lacrima Morra d’Alba was chosen. In addition to this quaint and historic red wine the produc- tion of Verdicchio dei Castelli di Jesi, strongly linked to the territory wines with a strong historical identity, was kept. The link between the Marche and the wine is lost in the mists of time: from the wine of Piceno recounted by the historian Polybius to mulled wine drunk by the emperors. Tradition has it that in 1167 Frederick Barbarossa during the siege of Ancona, chose the walls of Morro d’Alba as a home and shel- ter. The inhabitants were forced to give the emperor more expensive goods among which stood the precious grape juice of Morro d’Alba. There is plenty of historical evidence relating to the Verdicchio grapes, already appreciated in Roman times. Indeed it is said that the king of the Visigoths, Alaric, bound southwards to besiege Rome, crossing the territory that today corresponds to the Marche well loaded 40 mules with barrels containing this precious fruit.   3. Lacrima di Morro d’Alba Superiore D.O.C. That was born in the small area in the Province of Ancona, north of the river Esino and relates – wholly or partly – to six municipalities: Morro d’Alba, from which it takes its name, Monte San Vito, San Marcello, Belvedere Ostrense, Ostra and Senigallia. Regarding eating this wine matches nicely with Juicy, tasty and aromatic foods also with sweet trend. It goes well with fi lled pasta dishes and pasta dishes with red sauces. Excellent with grilled lamb. FEATURES Grape It is obtained from the native Lacrima wine grapes. Other species of authorized red grapes, as Merlot or Montepulciano, may be employed to a maximum of 15% . Appearance Deep ruby red. Fragance and taste Intense, persisting and fruity. It also reminds red fruits. The taste is dry, savoury and soft. It is a tannic wine and with an important structure. Alcohol level The minimum level allowed by D.O.C. rules is 14% vol. Optimal aging D.O.C. rules provide for one year aging in cellar before bottling. Glass and service Glass to be middle size, spherical shaped, colourless, smooth, very thin and with long stem, narrowing toward the end.   4. Lacrima di Morro d’Alba D.O.C. Produced in the same restricted area of the Superior, this wine is characterized by soft and pleasant texture, which allows combinations with pasta dishes with red sauce and meat sauce, cold cuts, with fi sh marinated blue or soused with the same wine, with seconds dishes of white meat. The “Tear” in loving and bubbly type reveals a great wine to end the meal. Produced in the same limited area of the Superior, this wine is characterized by soft and pleasant texture, which allows combinations with pasta dishes with red sauce and meat sauce, cold cuts , with marinaded sardines, anchovies and mackarels or soused with the same wine, as well as second courses of white meat. The “Tear” in smooth and bubbly type reveals a great wine to fi nish the meal with. FEATURES Grape It is obtained from the native Lacrima wine grapes. Other species of authorized red grapes, as Merlot or Montepulciano, may be employed to a maximum of 15% . Appearance Deep ruby red, with violet tones in the fi rst period. Fragance and taste Pleasant, intense, persisting and fruity. It also reminds red fruits. è molto caratteristico. The taste is palatable, dry, savoury and soft. It is very typical. Alcohol level La gradazione minima prevista dai disciplinare è 11% vol. Optimal aging If tasted young bouquet and taste are brighter. This wine can also moderately aged for 3-4 years: bouquet and taste get fl oral fl avours of broom, heather and blue berry. Glass and service Glass to be middle size, spherical shaped, colourless, smooth, very thin and with long stem. For middle aged wine a semiovoidal,narrowing toward the end glass is preferred. Softness of this wine allowes the service at about 15°C. Slightly higher temperature, 16°-18° C is necessary for 3-4 years aged wine. www.palazzocensibuffarini.it

  5. Verdicchio dei Castelli di Jesi Classico D.O.C. Produced in the district including the hills in the center of the province of Ancona and a small part of the territory delimited in the province of Macerata, uses the Classic mention because produced in the oldest original zone, the castles of Jesi. All Mediterranean dishes found in the approach satisfaction with this white: white meat, boiled meat, mushrooms, truffl es, fried vegetables. It is excellent with dishes based on fi sh. FEATURES Grape It is obtained from the “Verdicchio “ wine grapes. Appearance Colour is straw-yellow,sometimes with thin green hints that become golden yellow along with ripening . Fragance and taste Delicate,fresh and persistent fruity and oral aroma, scent of bitter almonds. Taste is dry, delicate,harmonious with a pleasant bitterish aftertaste. Alcohol level The minimum level allowed by the appellation is 11,5% vol. Glass and service The glass that best allows to appreciate the avour of this wine, especially notable with young wine, is semiovoidal, narrowing towards the edge, very thin, colourless,with high stem. This wine is to be served at a temperature of 10°-12° C but, if served as an aperitif, the right temperature is 8°-10° C. www.palazzocensibuffarini.it

  6. Sirangò Brut The origins of Sirangò are in the effervescence process of pure Verdicchio grapes. It stands out thanks to its perfumed notes, characteristic of this wine grape variety, and for its fi ne but persistent perlage. It originates from the district that includes the hills of central Ancona and, in a lesser part, from the territory delimited by Macerata province. FEATURES Grape It is obtained exclusively from grapes from the Verdicchio vine with the Charmat method. Appearance Muted straw yellow with rapid pale green refl ections.Brilliant clarity with a perky white foam. Fragance and taste Dry, but mellow. The nice, slightly bitter aftertaste leaves one pleasantly surprised after having appreciated its intense and yet delicate fragrance. Alcohol level Expected alcohol content is 12%. Glass and service It is recommended to serve the sparkling wine in a fl uted glass or alternatively in a champagne coupe, preferably at a temperature of 8°C.
