In 2011, the company SDMR is bought by the family group Charbonneaux-Brabant, specialized since 1797 in the manufacture of vinegars and mustards in the region

In 2009 Balsamic Vinegar of Modena has gained the European protected status of “Protected Geografical Indication”. Main points:
- All the producers and all the productions must be in compliance
with PGI Regulation
- Every producer is audited once a year (sanification, traciability,
paperworks, … ) by a third party Authority
- Every production batch is sampled and analyzed by a third
party lab designeted by Authorities before being placed on the market.
- Every label must be approved by the same Authorities (no
numbers or adjective allowed)

(This is ALICO internal definition) The most objective parameter to qualify a balsamic vinegar is its DENSITY ( i.e 1 liter of water weights 1 kilo and the density is 1 while 1 liter of a balsamic that has a density of 1,30 weights 1,30 kilo). Why density? Two reasons: 1. The more you have grape must in the initial blend, the more dense the blend will be 2. The longer the product is aged, the more it become thick We have defined four classes of qualities: low: density lower than 1,17 medium: density between 1,18 and 1,25 high: density between 1,26 and 1,30 very high: density higher than 1,30
