Our story

The Dauré family acquired Château de Jau, in 1974, one of the most beautiful viticultural properties in Roussillon. Founded in the 12th century by Cistercian monks, the château has had a number of owners who have restored the original buildings over time. The chateau itself, today the home of Sabine and Bernard Dauré, was built at the end of the 18th century. In 1983, the family decided, to clear the garrigue-covered slops and plant Grenache Noir and Carignan on a plateau

  • f 26 hectares. Rocks were broken and ground down to

create land for vines, Bernard Dauré remembers with amusement the lines of onlookers who came on successive Sundays to “have a look at the cemetery.” Today, these vines, at times influenced by the sea, at other times “cleaned” by the north wind, enjoy an ideal exposure that favors the full maturity of the grapes.

Our Vineyards

Our vineyards are situated in the heart of the Agly Valley in the Roussillon, 20 km from Perpignan. Today the estate has 100 hectares of vines and 500 hectares of

  • garrigue. In the plots that run along the Agly valley and in those that

cling to the slopes up to 150 metres in altitude, Syrah, Mourvèdre, Cabernet, Muscat à Petits Grains, Vermentino and both red and white Grenache which drive their roots deep into soils of clay, clay- limestone, marl, and dark schist. Those parcels that occupy the former garrigue clamber up to 300 metres in altitude where Carignan and Grenache Noir occupy a bed

2 2 , 0 0 0 h e c t o l i t r e s o f c a p a c i t y The cellar too is the work of Bernard and Jean Dauré who have always pursued a policy of installing the most efficient equipment: stainless steel vats, rotary vats, pneumatic presses ... The entire cellar is air- conditioned, as is the storage cellar with a capacity of 1,200,000 bottles, and the barrel cellar (600 square metres) that houses up to 1,700 barrels. T h e J a u h a r v e s t The harvest begins in the last week of August with the Muscat à Petits Grains and finishes in the middle of October with the Mourvèdre. The harvest is hand picked for the steepest parcels and by machine for the

  • thers. Increasingly at Jau, mechanical harvesting is

used as this allows both the picking of grapes at perfect maturity and harvesting at night when temperatures are at their coolest. By these methods, the highest quality results are assured. All the wines at Jau are matured exclusively in vats in

  • rder to preserve their fruit. Once bottled, they spend

time in the air-conditioned cellar and are not released until they have achieved the required maturity.
