Black Garlic is a product of Maillard Reaction. Fresh garlic (Allium sativum L) turns into this magical product after a long period of time under controlled high temperature and high humidity. This process causes sugars and amino acids inside garlic to react which results in the black pigmentation and soft texture like a marshmallow.
