WHAT IS
DairyBoost™ is a natural flavour and textural modifier that has been processed from fresh dairy cream. The fresh cream undergoes a biochemical process that results in

DairyBoost™ provides a rich and creamy mouthfeel for reduced- fat foods and beverages where the product can be perceived as thin or lacking in substance when compared to a full-fat variant. In dairy applications the addition of DairyBoost™ has a synergistic benefit when combined with low levels of fat to deliver a fuller and more robust textural profile. It functions as fat replacer and mouth-feel/texture modifier especially in low-fat dairy and food products. When used in applications that may not contain dairy, such as confectionery, soups and sauces, DairyBoost™ contributes a smooth dairy cream taste perception.

DairyBoost™ Cheese use proprietary enzyme modification technology and time-temperature processing to liberate the intense flavour potential that is hidden within cheese. These natural cheese flavour concentrates deliver up to 15 times the flavour strength of standard cheese ingredients, and are used at low dosage (usually less than 1.0% as consumed). DairyBoost™ Cheese flavours are a healthy choice, too, with less than 0.15% fat.
