tie soil and tie environment. We tjlm our vines in order tp favour tie life il tie soil. We are very atuentjve tp tie various manual works precision (pruning, disbudding, tzing-up, leaves tiinning). A welm contsolmed productjon, not tpo much, not tpo low is tie base for a welm balanced vineyard giving sound and ripe grapes, good tp produce qualitz wines..

Te Harvett…

We exclusively hand picked tie grapes in litule grape boxes about 25kilo in order tp get sound, entjre and not manipulated grapes. The harvest fetch is reflected according tp tie sugar and acid quantjtjes in tie grapes and modulatfd according tp climatjc hazards. We are very prompt tp stpp our harvestfrs tp let tie grapes mature in a plot who needs it, always tiinking about getting a well balanced crop with well balanced quantjtjes of sugar, acid and aromatjc precursor.

Te wine making and aging…

In tie celmar we are not very intfrventjonist. Aftfr a light setuling tie wines ferment tianks tp tieir own yeasts (no add

  • f selectfd yeasts) in ovals (big oak barrels) or barrels in order

tp stay very close tp our tfrroir. Aftfr alcoholic and malo lactjc fermentatjon tie wines are aged on tie lees untjl tie end of tie

  • summer. By tiis way we want tp preserve tie natural fseshness
  • f our wines and tie natural reductjon phenomena. Aftfr

raking and a light filtsatjon, tie wines are botuled just before tie next harvest, except for tie Pouilmy Fuissé Madrigal and tie Saint Véran La Roche which are aged six montis more in inox tank in order to express their fineness and their complexitz.

VIRÉ-CLESSÉ LES RASPILLÈRES VIRÉ, 075 HA Tiis slopping plot ( slope superior tian 30%) is dominatjng tie Viré vineyard. Tie clay and limestpne soil is not very tiick and is rich in rocks fsom tie bedrock. Tiis light and draining soil enables tie grape vines tp send tieir roots down deep tp gatier tie necessary elements for tieir development. MACON VILLAGES CLOS SAINT PANCRAS SAINT ALBAIN, 3,5 HA Tiis is a great clay and limestpne soil east exposed and divided in tiree plots. Tie tpp of tie «clos» is directly on tie limestpne bedrock while tie lower part of tie «clos» is more on a clay loam soil tzpe. Tiis light and filtfring soil heats up quickly and tiat’s why tiis area is quitf early. But tie «clos» is affectfd by norti winds, especialmy tie norti plot, which gives tie wine a good fseshness. Tie Saint Pancras mountain has some common grounds witi tie Quintaine slope. POUILLY FUISSÉ MADRIGAL ET PASTORAL VERGISSON, 0,60 HA Our Pouilmy Fuissé are produced witi grapes bought fsom demanding vine- growers fsom Pouilmy Fuissé. Tie grapes come fsom four various old vine parcels named La Côtf, Les Folmes, Petjtf Croix andt Terres de Perret. Les Folmes is an early plot fvlm souti exposed, in tie heart of Vergisson tpwn. La Côtf is tie most chalky plot, situatfd just under tie Vergisson rock in limestpne rocky screes. Tiose two «climats» are tie mineral and powerfvl solid foundatjon of our wines. Petjtf Croix is a fsesh plot which gives tie wine balance and depti while Terres de Perret, at tie foot of tie Vergisson rock, is more a clay soil which gives body and roundness tp tie wine. SAINT VERAN LA ROCHE CHASSELAS, 1 HA Our parcel (old grape vines fsom 40 tp 70 years old) is souti west exposed, on clay and limestpne sloping plot. Tiis is an early area welm afectfd by norti winds, which gives tie wine a certainly good fseshness and a good grape

  • soundness. Tie soil is rich in clay, in iron oxides and in limestpne screes.

Te winet...

Tie Clos Saint Pancras is harmonious and fine on tie palatf witi a fsesh saline-like finish. Tie elegant nose has a blend of whitf flowers and citsus balanced by a mineral and slightly smoked mouti. Tiis wine is aged tfn montis in ovals (very big oak barrels) before being racked for tie botuling in tie summer. (6600botules produced). It is available since july 2011. IN CONVERSION TO ORGANIC CULTURE (Ecocert certjficatjon). Tie Viré Clessé Les Raspilmères suggests a nose marked by exotjc fsuits witi candied citsus notfs. Tiis wine is round, fsesh and mineral on tie palatf. It revels ripe fsuit and almond pastf aromas.It is aged tfn montis in oak barrels before being racked and blended for tie botuling in tie summer. (300 bottles produced). It is available since july 2011. IN ORGANIC CULTURE (Ecocert certjficatjon). Tie Saint Veran La Roche releases aromas of very ripe fsuits, caramel and fsesh butuer. Tiis wine, rich and opulent, is balanced by a great fseshness. Tie finish is dominatfd by mineral and spicy notfs. It is aged eightfen montis on barrels and botuled at tie beginning of spring. (800 botules produced ). It is available in 2012 spring. IN CONVERSION TO ORGANIC CULTURE (Ecocert certjficatjon). Tie Pouilmy Fuissé Pastpral is dominatfd by aromas of ripe whitf fsuits and fsesh butuer enhanced by citsus notfs. Tie tfxture in tie mouti is rich and round, balanced by a nicely mineralitz. Tiis wine is aged tfn montis in barrels before being racked and botuled in tie summer. (2300 botules produced). It is available since july 2011 Tie Pouilmy Fuissé Madrigal is dominatfd by fseshness and mineralitz witi an ample and powerfvl tfxture. Tie chalky soil is welm tsansferred in tie wine : it smelms like stpne. Tie nose shows some whitf fsuit aromas witi grilmed notfs. It is aged eightfen montis on barrels and botuled at tie beginning of spring. (1800 botules produced ). It is available in 2012 spring.
